Chocolate Chip Pancakes

Super easy, fluffy chocolate chip pancakes perfect for a calm weekend morning - taste tested and approved!

Ingredients

  • 1 ½ cup all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp sugar
  • 1 ¼ cup milk of choice
  • 1 egg
  • 3 tbsp butter, melted
  • 2 tsp vanilla extract (optional)
  • ½ cup chocolate chips

Instructions

  1. Step 1. In a large bowl, whisk flour, baking powder, salt, and sugar. Make a well in the middle and pour in milk, egg, slightly cooled butter, and vanilla extract (if using). Break up the egg first, then combine the flour starting from the outside of the bowl and working in, until just combined and mostly smooth.
  2. Step 2. Add chocolate chips and fold into batter.
  3. Step 3. Heat a non-stick griddle or large pan over medium-high heat. Once hot, grease, spray, or melt butter on the pan.
  4. Step 4. Pour 1/4 cup or 1/3 cup (depending how large you want them!) of the batter onto the pan. Cook the pancakes for about 2 minutes, until the edges begin to look defined and bubbles form on top. Flip the pancakes over and cook for another minute on the other side. Avoid pressing down on the pancake after flipping to keep them fluffy.
  5. Step 5. Remove the pancakes from the pan onto a plate while you cook the rest of the batter.
  6. Step 6. Add your favorite toppings and enjoy! 🌞

Notes

• Swap out the chocolate chips for your favorite pancake add in - blueberries, bananas, or keep it classic with no additions! • This recipe makes 8 good-sized pancakes. I usually double it for more - these make great leftovers to later!
