Ingredients

  • ½ cup unsalted butter, slightly softened
  • 1 ⅓ cups all-purpose flour
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ tsp baking soda
  • 1 tbsp corn starch
  • ½ tsp fine salt
  • 1 large egg
  • 2 tsp vanilla extract
  • ¾ cups chocolate chips

Instructions

  1. Step 1. Line a baking sheet with parchment.
  2. Step 2. In a medium bowl, cream the butter and both sugars together. You can do this with a mixing bowl or using a spatula.
  3. Step 3. Add in vanilla and egg, mix everything until smooth and well incorporated.
  4. Step 4. Add in the flour, corn starch, baking soda, and salt. Stir until just combined.
  5. Step 5. Fold in the chocolate chips.
  6. Step 6. Scoop out the cookie dough to create 8, 3 oz cookies. (I make them more coned shape to keep them thick and less spread out once baked)
  7. Step 7. Once ready to bake, preheat the oven to 325°F (162°C)
  8. Step 8. Place cookie dough on a parchment paper lined baking sheet and bake 15-18 minutes, or until the edges are golden and set, and the middle still looks slightly underbaked. They will bake a bit more after pulling them out of the oven.
  9. Step 9. Use a large cookie cutter to swish the cookies around as soon as they come out to make them perfectly round.
  10. Step 10. Cool on the baking sheet for 5-10 minutes, then transfer to a cooling rack.
  11. Step 11. Sprinkle with sea salt if desired and enjoy 🌞

Notes

• I recommend freezing the dough on a parchment paper lined baking sheet for at least 2 hours, or overnight if possible. This will ensure the cookie holds its shape and comes out thicker, not spread out. This is a recommendation and not a requirement, if you don't have time to wait!
